Okay, so I’m not a huge chocolate fan – I don’t really like it. Now if chocolate was a big ass bag of sour cream & onion chips, I would eat the whole damn bag in one setting. Nonetheless, I think every one else in the world is a fan of chocolate so when I was making my boyfriend a little cake the other day, I decided to elevate it with a little chocolate buttercream icing.
This recipe is the best, like the best – and I just made it up the other day. Rather I put it together (fingers crossed) and it worked beautifully. So here it is:
- 1/3 + 1/4 cup of dark chocolate cocoa ( I used Bernard Callebaut’s Cocoa Powder)
- 1/2 cup softened butter
- 1/4 cup agave syrup
- 1 tsp. vanilla
- sprinkle of sea salt (optional)
- put all ingredients in a bowl and mx together until combined

This recipe is that easy!
You can add it to your cupcakes, brownies or whatever you want right away. If you do want to make it in advance – you can. Put it in the fridge in the meantime and take out about 25 min. before you want to use it and let it soften again. I put mine in a ziplock bag – I can then massage it as it warms up to make sure all ingredients remain combined; and I can also cut the tip and use it as a piping bag. Because as you’ll get to know – I’m not a fan of actual piping bags…I know they’re supposed to make life easier, but they make mine harder. I am always fighting with them. One day I’ll video it and you can all have a laugh at my expense.
