Green zinger smoothie

I love me a good smoothie.  Usually I just pull all the crap from my fridge that’s about to go bad and pair it with some of the stuff I have in my freezer.

But I thought I would do something a little more intentional for you guys!  Which is easy with all the goodies in my YYC Harvest Box.

This green zinger smoothie is just the thing to get you going in the AM.  It is jam-packed with nutrients that will nourish your body, and fill it naturally with energy and hydration.

This smoothie is a great source of vitamins, minerals and antioxidants.  Plus the ginger and turmeric have awesome medicinal properties.

YIELD – 2 smoothies

INGREDIENTS

  • 1 handful off swiss chard, hard stems removed and leaves torn (about 4-6 stems)*
  • 1/2 green apple, cut into chunks
  • 1 inch chunk of ginger
  • 1 cup coconut water (add more or less depending on the thickness you like)
  • 1 handful of mint (about 4-6 sprigs)
  • 1/2 English cucumber
  • Juice from one lemon
  • 11/2 cups of frozen pineapple*
  • 1/4 tsp. turmeric*

DIRECTIONS

Add all ingredients to Vitamix (or other blender), starting with the coconut water. Blend until smooth.

*Special Notes: If you don’t have swiss chard, use kale or spinach or romaine.  I mostly use frozen fruit for my smoothies.  It’s more cost-effective and I find if I buy a whole bunch of fresh fruit, I often have waste.  My intention is always to freeze it if it’s about to go bad, but that doesn’t always happen. So this way I have way less waste.  Plus frozen fruit makes for a nice thick smoothie texture.  I add 1/2 tsp. of turmeric in mine, but I love the flavour.  For some people it can be little overwhelming, so 1/4 tsp. is more reasonable – or you can omit it altogether if you don’t like it.
