You guys it’s peach season!!! Isn’t summer the best?!?
But seriously those BC peaches are falling off the trees and thankfully going straight in my mouth.
I love baking with peaches (although I don’t love baking) and I love cooking with peaches, because you can do so many things with them. But today I wanted to highlight them in their natural habitat so to speak – just as they are.
So I put together this very simple salad to accentuate the natural sweet flavour of the peaches, using the beautiful bag of arugula I got in my YYC Growers Harvest Box. And when I say simple I mean it – like so simple I don’t really need to write a recipe but I did. There is two ingredients plus a little seasoning, yep for real, two ingredients.
And here they are…
YIELD – 4 servings
- 4 ripe peaches
- 1 packed cup of arugula
- 1 tsp lime zest
- 1/2 tsp coarse sea salt
- 1/4 tsp dried red chili
- 2 tsp raw honey
- Juice from one fresh lime
- Add the sea salt, dried red chili and lime zest into a mortar and pestle and grind down a bit to break up the salt, chili and release the oils in the lime zest (you don’t want it to be a full on powder), and set aside.
- Slice the peaches into thin rounds (removing the pit), lay out on your serving platter or directly on the plates you’ll be eating off of.
- Put the arugula in the middle of the plate(s) over top of the peaches. Squeeze the lime juice all over, then drizzle with honey and dust with the chili lime salt. That’s it!!! Serve and enjoy.
Well friends, this may be the easiest recipe ever written, but it is insanely delicious. Considering it’s only 2 real ingredients and then the spices, lime juice and honey to finish it off – it has more depth of flavour then you could imagine.
It is the perfect light summer salad, will make a great lunch or accompaniment to roast pork loin or halibut.
So grab a bag of delicious BC peaches and some fresh arugula and put together this salad. For such a simple recipe, it packs an incredible punch!
