
Blueberry overnight oats with chia
Ok guys I have to admit when the whole overnight oats fad showed up I was a little sceptical. See, I’ve always had my oats warm – I come from the generation of Quaker Oats instant packages and cream of wheat (which by the way I LOVE); so the idea of having cold oats just didn’t do it for me.
It’s still definitely not something that I would order while out, but I have given it a whirl at home a few times. And actually, I kind of like ’em. But I do like them better when mixed with chia. I find it just breaks up the gritty texture a bit.
This recipe has to be one of my top ones. It is slightly sweet, the texture is perfectly palatable and it is super duper easy to throw together, plus Clint and Luna both love it, so that’s a win in my books.
This recipe is gluten-free (that comes down to the kind of oats you use) and vegan. It is super flavourful and the perfect filling breakfast or quick healthy snack.
YIELD – approx. 4 servings
INGREDIENTS
- 1 cup oats (I used Bob’s Red Mill Gluten-Free Oats)
- 1/4 cup of chia seeds
- 2 cups unsweetened oat milk (I used Earths Own, you can use whatever plant based or regular milk you like)
- 1 tsp vanilla (optional)
- 1/2 tsp cinnamon
- 1 tbsp maple syrup
- 1 cup frozen blueberries, thawed*
*Special Notes: You can definitely use fresh blueberries here, but I prefer frozen. Once they’re thawed and mixed into the oats/chia they add a little juice and more to the texture.
DIRECTIONS
- In a medium sized bowl add the oats, chia seeds, vanilla, cinnamon, maple syrup and oat milk. Stir really well until all ingredients have been combined. Then let sit for 10 minutes.
- Add the blueberries into the bowl and mix well. Cover with an airtight lid (or transfer to an appropriate bowl with lid) and allow to sit in the refrigerator for at least 6 hours, preferably overnight.
- Scoop, serve and enjoy!

And it is delicious. Sweet, rich and hearty with the lovely juice blueberries adding the perfect touch.
As I said the vanilla is optional, but for me I think it makes it better. Another alternative is to use unsweetened vanilla oat milk instead of adding the vanilla.
