Still holding onto summer over here…there was one really cold night, but the rest have still been pretty. nice. That is a BIG deal in Calgary; we never get summer this long, in fact two years ago it had already snowed by now.
So in celebration of the beautiful weather, I’m posting another summery cocktail recipe. I realize I’m a little late; but this way you’ll have it for next year.
I went to the market the other day and there were still so many gorgeous peaches so I couldn’t help myself; I got another big box. I also still have lavender you guys – like tons of it, so I clipped a bit more and decided to make a hard iced tea. I had been craving iced tea all summer and had still not had one.
- LAVENDER SYRUP
- 2 cups water
- 8-10 sprigs of fresh lavender or 2 tbsp dried lavender
- 1 cup sugar
- PEACH ICED TEA
- 4 tea bags (black tea or ceylon tea)*
- Juice from one lemon
- 12 oz vodka (plain or peach vodka)*
- 2 peaches, sliced
- 8 cups water
- OPTIONAL GARNISH
- lavender sprig
- fresh peach slice
- fresh lemon slice
- We'll start by making the lavender syrup. Bring the water to a boil. Add the lavender sprigs (or dried lavender), stir, and reduce the heat to a simmer. Simmer for 15 minutes. Remove the lavender sprigs from the syrup and set syrup aside to let cool. If you are using dried lavender you will need to strain the flowers out of the syrup.
- While the syrup is simmering, we will bring the 8 cups of water to a boil in a large pot. Once it starts to boil, turn the heat down to a simmer, add in 4 tea bags and half of the sliced peaches. Let simmer for half hour, then remove from heat and let cool.
- Once both the tea and the syrup have cooled, pour them into your preferred jug. Add the lemon juice from one lemon and give it a good stir. Then, add ice and peach slices. Lastly pour the 12 oz of vodka in and give it another really good stir.
- Prepare your glasses with ice and lemon slices. Pour the iced tea and garnish with peach slice and lavender sprig if you desire. Enjoy!
I use black tea, but if you want an extra citrusy punch, you can use a ceylon tea.
I use plain vodka, but peach vodka would be delicious!
If you're wanting to save some of the mix for another time or you don't have a jug that is big enough for it all you can mix in smaller batches - the ratio is 1/2 a cup of syrup with 2 cups of tea and 3 oz of vodka; but I would add the vodka in right before you're going to drink it.
The mix can be kept in an airtight container in the fridge for 5 days.
