My favorite dry rub (for chicken or tofu)

Happy weekend everyone, hope you’re all enjoying it wherever you are.

I wanted to share one of my favourite dry rubs with you guys, because it makes having a healthier dinner quick and easy. We use this rub most often on chicken drumsticks at our house (as Luna loves them), but it is equally (if not more) delicious on tofu too and the rub itself is vegan and gluten-free.

It’s so quick to throw together, that you can make the batch at the time you need it; but if you have room in your pantry then definitely make a larger batch (like quadruple or more) and keep in an airtight container for 6 months. The rub has herbs and spices and is filled up with nutritional yeast flakes and makes for a savoury, earthy rub with great depth of flavour.

To use this on chicken drumsticks (thighs, or breasts): just pat the chicken dry with paper towel, pour the rub into a ziplock bag and drop the chicken in the bag. Seal the bag and shake around until fully coated. Bake chicken or use air fryer (my favorite). It’s a great healthier replacement for fried chicken and I promise you it’s just as flavorful.

To use it for tofu: cut the tofu to desired size and pat dry with a paper towel, pour the rub into a ziplock bag and drop the tofu in the bag. Seal the bag and shake around until fully coated. Pan fry the tofu in a pan with a shallow layer of oil.

My favourite dry rub for chicken drumsticks, it makes for crispy skin on the outside and moist flavourful chicken on the inside.

Ingredients

  • 1/3 cup nutritional yeast flakes
  • 1/4 tsp salt
  • 1/2 tsp seasoning salt
  • 1/4 tsp pepper
  • 2 tsp Italian seasoning
  • 11/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Grab a small bowl and whisk ingredients together until combined.
  2. Rub can be kept in an airtight container for 6 months.

Notes

*This amount makes enough for about 8 drumsticks, or 2-3 large tofu blocks, but you can easily double, triple etc.. the recipe to have on hand for the next time you want to use it.

*This rub can actually be kept in an airtight container for easily up to a year, but I tend not to keep it that long.

Serve up your chicken or tofu with any salad and you have a great, simple and fast meal ready for any busy weeknight. This is usually when I pull out the kitchen sink salad, you know whatever we have in the fridge. It makes for a really tasty meal with very little effort.

If you’re doing chicken you can also pair this up with some greens drizzled with my homemade buttermilk ranch. The chicken also tastes great dipped in the ranch if that’s your thing!
