Rolo brownies with salted caramel frosting

Yep you heard me right, ROLO BROWNIES baby, because why not.

Actually the reason is, I had rolos for a hot chocolate board I was making and had a bunch left over. I was going to make brownies anyways, because National Brownie Day is coming up and it seemed like a good excuse; and so my rolo brownies were born.

Now, these are not healthy guys I’m just going to say it. They are sweet, chocolatey, delicious bites of caramel glory, but they are NOT a health conscious snack – just so you know. They are an over the top unnecessary treat! That being said, if you follow me you know I’m healthyish. I healthify A LOT of stuff, and some stuff I just enjoy the way it is, I just try not to eat a ton of it. So we ate some of these brownies and we gave some away, that’s the beautiful thing about baking – someone is always willing to be a taste tester.

But now that we got the disclaimer out of the way – these are seriously delicious. If you like rolos, you’re going to LOVE these brownies, hmm hmm.

The brownie recipe is pretty quick and easy to throw together and a great one to make with kids (as long as you’re ok with them eating some of the rolos and the brownie batter, because that’s sure to happen, but they will of course love you for it).

These brownies are pretty thin and believe me you won’t need more. Between the rolos in and on top of the brownies, the rich chocolatey brownie itself and the salted caramel frosting, they are rich, decadent and sweet and you will not want more. A couple small bites are just perfect.

But if you do want them to be a bit bigger (thicker), you can 1.5X the recipe and it will still fit perfectly fine in the brownie pan.

Rolo brownies with salted caramel frosting are rich, decadent and oh so sweet.

Ingredients

  • BROWNIES
  • 1/2 cup unsalted butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup granulated sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup mini rolos
  • SALTED CARAMEL FROSTING
  • 1/2 cup unsalted butter
  • 3/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk (regular or plant based milk is fine), just enough to get the thickness you want.
  • 2 -21/2 cups confectioners' sugar
  • TOPPINGS
  • 1/2 cup mini rolos

Instructions

  1. Preheat oven to 350F and grease an 8" x 8" square brownie pan and line with parchment if you want life to be easier.
  2. In a stand mixer fitted with the paddle attachment cream butter and sugar until smooth. Next, add eggs one at a time and then vanilla extract.
  3. Sift in cocoa powder and mix until completely smooth, then add flour and salt and mix until just combined, don't over mix. fold in rolos by hand.
  4. Pour into your greased and lined brownie pan and spread evenly with a spatula.
  5. Bake for 18-20 min. You don't want to over bake, you want them to still be a bit gooey when you pull them out. When they're done, let them cool in the pan for 10 min before you remove and cool the rest of the way on a rack.
  6. While the brownies are baking, make the frosting. Melt the butter in a small heavy bottom saucepan over medium heat. Once melted, add brown sugar, whisk constantly until sugar is dissolved then add the salt. Allow to bubble for about 4 to 5 minutes, whisking every min or so. Remove from heat, pour into a heat-proof mixing bowl and allow to cool for about half hour.
  7. With a hand mixer (or a stand mixer fitted with the whisk attachment) beat in 2 cups confectioners’ sugar. Add 1 to 2 tbsp of milk as needed for desired consistency. If you would like a thick frosting, slowly add 1/4 to 1/2 cup more confectioners’ sugar until you reach the desired consistency. If you find the frosting too thick, you can adjust by adding a splash of milk.
  1. Once brownies are cooled frost and top with the remaining 1/2 cup mini rolos. Brownies can be kept at room temperature for 2 days, but they are better in the fridge and can be kept there for 1 week.
