Mediterranean Pasta Salad

Looking for a new and delicious pasta salad recipe? Look no further than this Mediterranean version! Pasta is combined with artichoke hearts, cherry tomatoes, olives, sundried tomatoes and cucumbers. Crumbled feta cheese and a delicious Mediterranean dressing add tons of flavor. This salad is perfect for potlucks, parties, lunches or a quick and easy weeknight meal.

Ingredients
 

  • 1 box pasta nothing long
  • 1 cup english cucumber sliced, half moon
  • 1/2 medium red onion diced small or sliced thin
  • 11/2 cups grape tomatoes halved
  • 1 can artichoke hearts rough chopped, about 1 cup
  • 1/3 cup black olives sliced
  • 1/4 cup sundried tomatoes roughly chopped
  • 1/2 cup flat leaf parsley chopped
  • 1 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 1 lemon juiced, about 3 tbsp.
  • 1/2 tsp cracked pepper
  • 1 tsp kosher salt

Instructions

  • Cook pasta according to the instructions on the box. Then let cool for at least 10 min.
  • Add all remaining ingredients to the cooled pasta.
  • Mix & Enjoy! It's that simple.

Notes

Pasta salad is better with short noodles, ie) no spaghetti, linguine, fettucini, etc... Any short noodle will do - you can try penne, rotini, bowties macaroni, cavatappi, mini shells, the options are endless.
