Homemade cherry cheesecake popsicles

These popsicles are rich, creamy and taste just like cherry cheesecake. They are a great one to make with the kids, but perfectly indulgent for adults too.

Equipment

2 popsicle molds any popsicle mold will work

Ingredients
 

  • 11/2 cup fresh cherries pitted
  • 3 tbsp water
  • 2 tbsp granulated sugar
  • 1/2 cup condensed milk
  • 2 tbsp lemon juice freshly squeezed
  • 8 oz cream cheese room temperature
  • 1 tsp vanilla

Instructions

  • Add the cherries, sugar and water to a small saucepan on medium heat and bring to a boil. Stir and bring heat down to low for about 15 min until the cherries break down and mixture thickens a bit.

  • Then remove from heat and mash with a potato masher. Set aside to let cool.
  • In the mean time with an electric hand mixer, mix together the room temperature cream cheese, lemon juice, vanilla and condensed milk until it’s smooth and creamy.
    1/2 cup condensed milk, 2 tbsp lemon juice, 8 oz cream cheese, 1 tsp vanilla
  • Then fold in the cooled cherry mix with a spatula. If you want that swirled look, don't mix it too much.
  • Spoon the popsicle mix into your popsicle molds and into the freezer for at least 3 hours until they are nice and set.
  • Take out and lick until gone.
