Bringing you back to your childhood
One of my favourite summer childhood memories is running around outside in the sun at my grandparents house. We always knew when it was time to go inside there would be some kind of frozen treat to cool us off.
My grandma made everything from scratch, except popsicles. But, she always had multiple store bought kinds. Fudgesicles, Creamsicles, you name it, they were in the freezer.
I never even thought about making homemade popsicles until a few years ago.I’ve always been more of a slurpee girl in my adult years. But once we had kids I really wanted them to have those same childhood memories in a slightly healthier way. So, I started making my own popsicles.
All I can say is that I should have started making these much sooner.
Does it have to be cherry?
Nope, but BC cherries are only around for a limited time and I like to take advantage. Plus cherry cheesecake is a classic pairing, think NY style cheesecake topped with those sweet cherries and sauce. These taste just like that.
Other fruit that works well – peaches, strawberries, blueberries, blackberries and raspberries all work well.
What you will need for these popsicles
Cherries – BC cherries are in season right now and you can find them pretty much anywhere.
Granulated sugar – if you’re looking for a substitution, honey or agave will work well.
Condensed milk – make sure it’s condensed and NOT evaporated. I’ve made that mistake before.
Lemon juice – freshly squeezed is the key!
Cream cheese – you’ll need it to be room temperature.
Vanilla
How to make these popsicles
First you’ll cook down the cherries just to bring a bit of sweetness out. Then you’ll mash them a bit and let them cool.
Mix the other ingredients together – with an electric hand mixer, you’ll beat together the condensed milk, cream cheese, lemon juice, and vanilla until it’s smooth and creamy.
Fold the cherries in – fold them in gently by hand. If you want a swirled look don’t mix too much.
Spoon the mix into your popsicle mold – these are a little thick so a popsicle mold that lays on a flat surface as opposed to a stand up one is easier.
I hope you love this recipe as much as I do. It is bright, fruity, just perfectly sweet-ish, super refreshing, and absolutely delicious.
Don’t be afraid to switch things up a bit and add more or less of something you know you do or don’t like.

What better way to continue celebrating summer than being outdoors enjoying a homemade healthier cherry cheesecake popsicle?
And when I say healthier, I mean healthier than the store bought crap. These are not the healthiest popsicles, but that’s ok – everything in moderation friends. I believe it is absolutely OK to have a yummy, tasty treat for no reason at all sometimes and these are definitely that. Plus they are super simple to make, and your kids are going to LOVE them and of course you, which is always a bonus.

Till the next recipe,
YUM! You had me at BC Cherries! I did not grow up on slurpees or homemade popsicles but our Sunday treat often involved the odd revel, creamsicle, or drumstick. I would have loved these as a kid and even more now as an adult. I’d better go grab some cherries before they’re gone.
Oh I forgot about Revels and I still do love a drumstick here and there. But, these popsicles are such an indulgent treat you won’t be missing the store bought ones.
These taste just like cheesecake and don’t last long in this house.
So happy you enjoy them!
I wish I had seen this recipe when cherries were in season but it’s OK because these popsicles are just delicious with BC peaches, too! Sweet, creamy and a perfect treat for this hot weather.
