Back from a 10 day road trip with littles and I AM

Back from a 10 day road trip with littles and I AM TIRED. So, meals are easy peasy until we get back in the groove which isn’t looking likely to be soon since it’s a long weekend and that always messes the routine up 🤷‍♀️.

It’s also 30°C + out there which is another reason not to want to cook.

Tonight was quick shrimp tacos using an @oldelpasocanada soft taco kit. I added some lime and avocado oil to cook the shrimp with the taco seasoning and that was about the most effort dinner took.

Made a quick salsa out of sweet red peppers, pineapple and mint from our garden. Added that, some avocado, corn off the cob, feta cheese, sliced tomatoes a scoop of Greek yogurt (love that extra bit of protein especially for the kids), and a good splash of @cholulahotsauce because it’s delish.

Dinners don’t have to be ínstense or time consuming to be delicious and nutritious.

Could I make tortillas - yeah I could but I’m not going to. Don’t be afraid to get shit from the store to make your life a little easier sometimes. There’s nothing wrong with it. These tacos were incredible, I would 100% make them again. You should try them too.

This is 40 fucking 5 🤯. 45!!!

Woah, where does the time go?!? The minute I had kids it just started to disappear. Wild how that happens.

As I get older its hard not to think of the advice I would give my younger self, what I would do differently if given the chance, where I would be if I had believed in myself more.

I don’t know if it’s regret or just retrospect but those thoughts are definitely there. Nevertheless, as I said on my 40th - it is NEVER to late to make change and be everything you’ve ever dreamed of.

So cheers to the me I am, the me that got lost, the me that I found, the me I became and the me I’ll keep changing.

Well I’m a couple days late as usual - but we have a 4 year old!!!  What a year it’s been.  We certainly set the bar when we named you Wilder- you are a Wild Man through and through.  
But on top of keeping us on our toes, you are all also kind, sweet, smart, funny, creative, curious, stubborn, strong and resilient.

Every day with you is a new adventures filled with silly stories. I love watching you play, you come at everything with such a curious mind. You love digging, climbing, building and playing outdoors.

I wish I could slow things down, go back in time, redo these last 4 years. But I know that’s not possible, so I’ll just keep trying to soak it all in little by little.

I’m so proud of the little man you’re becoming and so excited to continue to watch you grow and learn.
