Since Valentines Day is just around the corner I thought I’d share another super cute delicious recipe with you. 

My chocolate white chocolate chip cookies with STRAWBERRIES!!! These three flavours go so well together and they make perfect Valentines cookies.

They are absolutely incredible and such a fun twist off a regular old cookie. This recipe uses freeze dried strawberries which are definitely easier to find these days. You can grab them from Amazon, Superstore, even the Dollar Store in our neighborhood carries them.

They are rich and chocolatey, with a delightful sweetness from the white chocolate chips and strawberries.  I promise you, your whole family will love them.

Why white chocolate  strawberry cookies

I mean why not, right? But there’s a few reasons:

They have the perfect texture, especially straight out of the oven. These strawberry cookies are slightly soft and gooey with a crisp chewy edge.

The most amazing combination of flavours These chocolate cookies with white chocolate chips and strawberries are rich and chocolatey from the cocoa powder, sweet from the white chocolate chips and the strawberries offer this beautiful flavour that just brings it all together.

Strawberry cookies are pretty simple to put together with mostly staple pantry ingredients.

You can experiment with the freeze dried fruit. There are so many other amazing options for these cookies. Next up on my list are freeze dried bananas, blueberries, raspberries and blackberries. Yum.

This recipe uses mostly staple pantry ingredients and the addition of freeze dried strawberries.

Butter it’s gotta be the real stuff. Well it doesn’t HAVE to be, but these chocolatey white chocolate chip cookies with strawberries are better if it is. 

Brown sugar & granulated sugar the combination is what makes these strawberry cookies what they are. You can use all granulated sugar or all brown sugar, but it will change the consistency of the cookie. So just know this before you mess with the recipe.

Egg just one in this recipe.

Vanilla extract can be optional in some recipes but in this one it adds an important profile to this recipe, so try not to skip it. 

All purpose flour you don’t want to be subbing things like whole grain flour in this recipe, it’s just not the same.  That being said, you could sub a good gluten-free flour at a one-to-one ratio in this recipe. 

Unsweetened cocoa powder you want to grab a good dutch cocoa powder for these Valentines cookies to get that rich chocolatey flavour.

Freeze dried strawberries are the key to this recipe. You don’t want to use fresh or frozen strawberries.

White chocolate chips are a necessary component. They add the perfect amount of sweetness to counteract the bitterness that can come from the cocoa.

Salt and Baking Soda no surprises here!

  How to make strawberry cookies

These chocolate cookies with white chocolate chips and strawberries are pretty simple to make, like any standard white chocolate chip cookie. They’re just a bit more beautiful, fun and tasty!

Mix your wet ingredients you’re going to cream the butter with the sugar, then add the egg and vanilla.

Combine your dry ingredients together your flour, cocoa powder, baking soda and salt.

Pour the dry into the wet a little at a time until perfectly combined but not over mixed.

Fold you strawberries and white chocolate chips  into your cookie mix with a spatula.

Cover your mix and refridgerate at this stage you’re going to set your oven to 350F. Keep the cookies in the fridge, just until the oven is preheated. Line two baking sheets with parchment.

Bake your cookies when the oven is preheated, take the cookie dough out of the fridge and scoop about 11/2 tbsp per cookie onto the sheet (8 per sheet) leaving space around the cookies for spreading. Bake for 9-11 minutes just until the edge starts to crisp up and remove. DON’T overbake; you want these beautiful Valentines cookies to be soft, chewy and ooey gooey.

Favourite ways to share these strawberry cookies

Send it to Daycare/School Our kids get so excited to bring homemade snacks to daycare to share with their friends. You can make smaller cookies and put two in a little Valentines bag for a special treat to attach to each of the Valentines cards your kids give to their friends.

Package it up for friends we love doing little surprise drop offs. We will package this up in little heart shaped boxes or something with Valentines for our favourite people.

Anytime for anything these chocolatey white chocolate chip cookies with strawberries aren’t just for Valentines. These cookies are great anytime of the year, especially for your favourite chocolate addicts.

They make the perfect Valentines cookies, but don’t stop there; these delightful cookies are good anytime.

White Chocolate Strawberry Chocolate Cookies

These decadent white chocolate strawberry cookies are made using freeze-dried strawberries for nice concentrated strawberry flavour. They are rich, chewy and the perfect thing to curb that sweet tooth.

Equipment

1 Stand Mixer
2 Cookie sheets
1 Cooling rack

Ingredients
 

  • cup butter softened to room temperature
  • cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp kosher salt
  • 1 cup freeze-dried strawberries roughly chopped
  • 1 cup white chocolate chips

Instructions

  • In the bowl of a stand mixer fitted with the paddle attachment, cream butter on medium speed until silky, scraping down the sides when necessary. Add in the brown and granulated sugars and mix on medium speed until light and fluffy.
  • Add egg and vanilla and continue to mix until incorporated, do not overmix.
  • In a separate bowl mix together dry ingredients (flour, cocoa powder, baking soda and salt). Pour into wet ingredients a little bit at a time and mix on medium until fully combined. Then fold in freeze-dried strawberries and white chocolate chips with a spatula.
  • Cover cookie dough with plastic wrap and put in the refrigerator. Turn oven to 350F. Keep cookie dough in the fridge until it's preheated. Line 2 large cookie sheets with parchment paper. Once the oven is ready, remove the cookie dough from the fridge. Using a cookie scoop, scoop about 11/2 tbsp of dough onto the cookie sheet (8 per sheet), leaving 2 inches around each cookie to allow for spreading. Bake for 9-11 minutes, just until the edge is starting to crisp. The top may look a little loose and spongy, that's ok - the cookies will continue to bake as they cool. Do not overbake, you want these cookies to be soft, chewy and ooey gooey.
  • Remove from oven and let cool for 5 minutes on the cookie sheet, then carefully transfer to a cooling rack to finish cooling.

Notes

You can use all granulated sugar or all brown sugar, but it will change the consistency of the cookie. The ratio here allows for a moist soft cookie with a chewy edge and they are amazing. Using all brown sugar will result in a denser cookie and using all granulated sugar will result in a crispier cookie. So just know this before you mess with the recipe.
