There might not be anything more nostalgic than confetti squares, aka peanut butter marshmalllow squares or butterscotch marshmallow squares.  I remember them fondly from my childhood, but as an adult – I kind of thought ewwwww.

Last year Clint asked me to make them and my answer was a reluctant yes, haha! But, I love my partner so I went ahead and started working on them. I am so glad I did because they’re actually AMAZING.

Who knew they would be so good, and also so easy. They are the perfect no bake dessert to add to your holiday baking. I promise everyone will love them if not for the flavour, definitely for the memories it will bring back.

And if you want to switch it up a notch, you can make chocolate ones too! Just see below for recipe alterations.

Why you’ll love confetti squares

They are super simple to make with only 5 ingredients.

Ingredients for this no bake holiday dessert

These delicious confetti squares are made with only five ingredients. It doesn’t get much better than that.

Butterscotch chips

Peanut butter

Vanilla

Butter

Rainbow marshmallows

How to make no bake confetti squares

Melt butter and peanut butter together, stirring every couple of minutes.

Add the vanilla and butterscotch chips while the mix is still warm but not too hot, otherwise the sugars in the butterscotch chips will start to crystallize and the texture will feel a little gritty.

Stir in the rainbow marshmallows once it’s cooled to room temperature. 

Pour into your prepared brownie pan and let harden in the fridge for an hour or two.

Confetti squares, but make ’em chocolate

Ingredients

Semi sweet chocolate chips, 2 cups

Peanut butter, 1 cup

Vanilla, 1 tsp

Butter, 1/4 cup

Rainbow marshmallows, 4 cups

 

Instructions

The method is pretty much the exact same as regular confetti squares, except when you melt the butter and peanut butter you can do the chocolate chips at the same time.

Melt butter, peanut butter and chocolate chips together, stirring every few minutes.

Add the vanilla 

Stir in the rainbow marshmallows once the mix has cooled to room temperature.

Pour into prepared brownie pan and let harden in the fridge for an hour or two.

These sweet no bake treats are honestly the perfect addition to this years holiday baking. They’re surprisingly delicious, pretty to look at, easy to make and bring bake a ton of memories. 

They will make a great baking tradition with the kids, something you can look back on for years to come. After all isn’t that what the holidays are really about?

Confetti Squares

You can't go wrong with this nostalgic dessert. Kids love the sweet rainbow marshmallows and they bring back so many memories for the adults. Plus they're quick and easy too.

Equipment

Brownie pan

Ingredients
 

  • 2 cups butterscotch chips
  • 1 cup peanut butter
  • 1 tsp vanilla
  • 1/4 cup butter
  • 4 cups rainbow marshmallows

Instructions

  • Line a standard 8x8 or 9x9 inch brownie pan with parchment paper.
  • In a medium pan, melt butter and peanut butter together over low/medium heat, stirring every couple minutes.
  • Once it's totally melted and warm but not too hot add the vanilla and butterscotch chips. Stir until completely melted.
  • Remove from the heat and allow to cool to about room temperature, then stir in the rainbow marshmallows.
  • Pour the mix into the prepared brownie pan and let sit in the fridge to harden, at least an hour.
